Baileys Part: 3/4 c cream. 1/3-1/2 cup baileys (depends on how strong you want it, if you go to 1/2 c, then only do 1/4 cup condensed milk). 1/3 cup sweetened condensed milk. 1 envelope gelatin powder (add 1/2 of another envelope for a firmer set). Espresso Part: 3/4 cup hot espresso. 1/4 cup agave. 1/2 cup vodka. 1 envelope gelatin powder (it’ll be a softer set so add 1/2 of an envelope for a firmer set). Directions: 1. When I make it from scratch: 3 dl sugar, 5 dl flour, 1 dl cocoa, 2 tsp vanilla sugar, 1.5 tsp baking powder, 1 tsp baking soda, 0.5 tsp salt, 1.5 dl milk, 0.75 dl oil, 1 egg. Mix dry ingredients, add the rest, bake at 175°C for ~60 min. Cool completely. – Chocolate mousse: Melt 150g chocolate and let cool. Whip 200g cream cheese while slowly adding the chocolate. Whip 2dl of whipping cream separately and fold it in. (Make sure both are room temp.) – Raspberry compote: Boil 200g frozen raspberries with 150g jam sugar for 10 min. Let cool, ideally overnight.
