There’s plenty of different methods of making dough, but I quite enjoy a long, cold fermented dough for the thinner, new-haven esque style I’m personally going for. I typically let the dough cold ferment for 72-96 hours (although it can be ready sooner). But I highly recommend checking out @davespizzaoven and @akpizzaguy recipes that they have pinned/highlighted if you want dough ready in 24 hours without refrigeration- I’ve tried both and loved them. It’s 100° here all summer and the ambient temps in the house are around 75°. Even when we have AC set to 70°, the dough can easily over-proof and become very sticky. If you live in warmer climates, these tips and recipe adjustments are for you. If you live in cooler temps, or once the temperature drops, refer back to my original post.
