CUCUMBER AND BEETROOT SALAD * 300 g cooked beetroot, sliced • * 2 small cucumbers, sliced • * 1 red onion, sliced • * 1 tbsp chopped dill • * 1 tbsp chopped parsley • * 1 tsp nigella seeds (optional) • * Handful of mixed salad leaves • * Feta cheese (optional) Dressing • * 30 ml olive oil • * 1 tbsp white wine vinegar • * 1 garlic clove, crushed • * Salt and pepper In a large bowl, combine all the ingredients. Meanwhile, whisk olive oil with vinegar and garlic. Season dressing to taste with salt and pepper. Combine with the vegetables and mix well. Top with salad leaves. Vegan peanut miso ramen 🌱 I’ve been eating this meal on repeat lately, it’s so creamy, delicious & hearty! I hope you love it as much as I do 😌🍜 (Serves 2) Creamy peanut broth ingredients: - 1 tbsp oil - 1/2 brown onion - 2 cloves of garlic - 1/8 cup soy sauce - 1 tbsp gochujang paste - 1 tbsp white miso paste - 2 cups water - 1/8 cup smooth peanut butter - 2 tsp veggie stock powder - 1 cup soy milk To serve: - 200g noodles of choice - 200g firm tofu - 1 bunch broccolini - Kernels from 1 corn cob - Toasted sesame seeds, as desired - Spring onion, as desired - Chili oil, as desired #veganramen #veganmisosoup #vegansoup

RECIPE (4-5 servings, 1h prep time): -1 small cauliflower -120g walnuts -300g mushrooms Blitz up everything and mix with some oil and salt. Bake at 200C/400F for 30mins but stir after 15mins. -1 onion -2 pieces celery Finely chop and sauté in oil. -5 Tbsp tomato paste -1 Tbsp miso (optional) Roast for a bit. -60ml balsamic vinegar Deglaze the pan with it, then add the veggie mince. -1 to 2 cups (250ml-500ml) water -salt to taste -pepper to taste -1 Tsp paprika and dried herbs -2 bay leaves Stir and let it simmer for at least 20mins. RECIPE (4 servings 50min prep time): Sauce: -1 onion -3 cloves garlic -a thumbsize piece of ginger -1 small apple FRY in 3 Tbsp vegan butter -4 Tbsp flour -1 1/2 Tbsp curry powder -1 Tbsp tomato paste Stir it in -650ml water -1 Tbsp each soy sauce, ketchup, agave or maple syrup -salt to taste Simmer for around 10mins and then blend until smooth. Taste test and add more seasoning if needed. Tofu katsu: -2x 200g tofu Cut in filets -4 Tbsp corn starch with salt, pepper and paprika -5 Tbsp plant milk Mix. -panko breadcrumbs Bread the tofu and fry in oil until crispy. Quickles: -1 small cucumber -1 red onion -a handful of cilantro -5 Tbsp white vinegar -3 Tbsp agave -salt Mix and set aside. Serve everything with rice and enjoy 😉.
