Cowboy Caviar ⬇️:
recipe inspired by Bria on TT
3 mini cucumber, diced
1 small bell pepper, diced
1 small red onion, diced
1 can sweet corn, rinsed
2 cans 3 bean blend, rinsed (or 1 can of pinto and 1 can of kidney beans)
1 cup cilantro, chopped
2 small jalapeño, diced
4 oz feta, diced
1/3c Olive Oil
Splash of Apple Cider Vinegar 
1-2 tbsp hot honey
1 tbsp of taco seasoning 
1 juice of lemon
1 tsp kosher salt or to taste
mix all together and keep refrigerated

Pour the mixture into a small sauce pan and bring to a high simmer. Simmer for 2 minutes, then remove from heat and let sit for 15 minutes. After 15 minutes the vinegar thicken.-Use a dropper or a small spoon to drop tiny droplets of the balsamic vin mixture into the cold olive oil. -Strain the oil with the balsamic caviar through a fine mesh sieve.
