I always thought it was pickled beets but it’s actually pickled turnips with beet color! . Who else thought it was just beets? . 3 turnips cut into matchsticks 1 beet cut into matchsticks 3 cups water 1 cup vinegar 1/3 cup salt 2 cloves garlic smashed (in each jar) . Divide beets and turnips into jars. Add garlic cloves. Bring remaining ingredients to boil and add to jars. Let the them cool and cover. Leave in a cool dark place for 3-5 days.
