• 2 slices Bacon
• 2 lb Pork belly
• 8 cups Tonkotsu pork broth
Produce
• 2 oz Enoki or other mushrooms
• 2 cloves Garlic
• 3 Green onion
Refrigerated
• 4 Eggs, large or extra large
Condiments
• 7/8 cup Mirin
• 1/2 cup Soy sauce
• 12 tbsp White miso
Pasta & Grains
• 12 oz Ramen noodles, good quality dried
Baking & Spices
• 1 tsp Kosher salt
• 1 pinch Shichimi togarashi
• 1/4 cup Sugar
Beer, Wine & Liquor
• 7/8 cup Sake
