Robyn - Boursin Bruschetta Makes 24 Ingredients: • Pint of cherry tomatoes, quartered • ½ cup Basil, Chopped (or to taste) • 1 baguette sliced 1” thick • ¼ cup olive oil • ¼ cup balsamic vinegar • salt and pepper to taste. • 1 package Boursin Cheese Directions: 1. Cut the tomatoes into quarters and chop basil, put in bowl. 2. Whisk together olive oil and vinegar, salt and pepper and pour over tomato mixture. Nadya - Flaky Spinach and Feta Spanakopita Cookies Ingredients: 1 sheet of puff pastry, thawed 1 cup fresh spinach, chopped 1/2 cup feta cheese, crumbled 1/4 cup cream cheese, softened 1/4 teaspoon garlic powder Salt and pepper, to taste 1 tablespoon olive oil (for brushing) Directions: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. In a medium bowl, combine the chopped spinach, crumbled feta, cream cheese, garlic powder, salt, and pepper. Mix until well combined. Roll out the puff pastry on a lightly floured surface. Cut the pastry into small squares (about 2x2 inches). Place a spoonful of the spinach and feta mixture in the center of each square. Fold the pastry over to form a triangle or rectangle, sealing the edges with a fork. Place the filled cookies onto the prepared baking sheet. Brush the tops with olive oil to create a golden finish.
