BlackstoneBetty's Garlic Parmesan Chicken Skewers are a family favorite! These juicy, tender bites are marinated in a flavorful blend and finished with a rich garlic butter. Serve them up hot off the griddle with extra parmesan for a dish everyone will love! . Ingredients 4 boneless chicken breasts, cubed 15 medium-sized skewers . Marinade 1 tbsp oil 1 tsp grated garlic 1 tsp garlic salt 1 tsp paprika 1 tsp oregano 2 tsp Italian seasoning (Blackstone Tuscan Herb or Tutto Italiano) 1.5 tsp Blackstone Bayou Blend (Cajun seasoning) 2 tbsp Parmesan cheese ¼ cup Dukes Mayo . Garlic Butter 1 stick unsalted butter, melted 2 tbsp fresh grated garlic ½ tsp garlic salt 1.5 tbsp flat-leaf parsley, chopped 2 tbsp Parmesan cheese Pinch of crushed red pepper . Directions 1. Cube the chicken and place it in a large bowl. Add the marinade ingredients, coating the chicken evenly. Marinate for at least 20 minutes, or up to overnight. . 2. Thread the chicken onto the skewers. Preheat the Blackstone griddle to medium to medium-high heat and add a thin layer of oil. Place the skewers on the griddle and cook for 2-3 minutes on each of the four sides. . 3. While the chicken is cooking, mix the garlic butter ingredients in a small bowl. In the last couple of minutes of cooking, brush the chicken skewers with the garlic butter on both sides. Some cream cheese but we're opting for the lower fat one because this dish will be a lightened up version of the classic Artichoke Spinach Dip. Okay. So that's the one third less fat cream cheese. This recipe also calls for feta cheese and I'm opting for the fat free kind. Now to be honest I do not miss the fat in these lower fat versions because it still tastes nice and creamy. You've got a high a cup of feta. Feta is better. Feta is better. I love your little jokes. Now tell me where y'all are from in the comments because I love reading them. In addition to all the cheese we need some sour cream. Now once again I've opted for the light sour cream. We need one cup and that's just about what we've got here in this small. You just kind of guessing right? Yeah and I don't listen don't be afraid to just guess a little bit. It's not going to ruin the recipe if it's not perfect. We know that we are not perfect here in this house. We're not trying to be. Speak for yourself. That's my husband by the way. If you're just watching us for the first time, we are not chefs but I'll tell you what, we are entertainers that have a lot of fun in the kitchen. Garlic. Of course, you could use fresh garlic if you want and that's one of the great thing. You can customize this, use fresh everything but we're showing you the quick and easy version. So, we're going to just use this already minced garlic and Kyle likes garlic a lot. I think I'm going to give just a little bit more. One more scoop. One more? Yes, I love garlic. Okay, perfect. There we go. Already looking good but now we need to add some milk. I have opted for the 2% just to give you a little bit of creaminess but you could even go for the fat free if you wanted to. This one needs 3 quarters cup. There we go and you just pour that over the top It's going to make it nice and creamy. We also need some mayo in this one, of course. I'm opting for the light version. I know some of y'all might say light mayo is not mayo. So, go ahead and use the full fat if you'd like. I think we're going to have to do some guessing on this too. Alright. Does that look like about a third of cup? Sure. There we go. That we're going to assume that's a third of a cup because now, what do you like your spinachar chip on? Do you like it with chips or do you like it like on toasty bread? How we going to do this? Oh, I've never had it on toasty bread. Oh, that's going to be good. Is that enough pepper? I think I got a lot there. Is that good? There's one other ingredient and we need some parmesan. Oh, parmesan. That's my job. I can get that some in the fridge. There we go. Parmesan is in the fridge. Ooh good. This is a good kind of parmesan. Alright. Now, I use about a third, three quarters of a cup of Parmesan on this. Okay. And that's about half of what I have left in this bag. So, we're just going to guesstimate Dump that on there. Fancy. There you go. Of course once again you could use fresh even better. But we are showing you the quick and easy version. And this is really quick and easy. Everything I put in there is all you need. Put the lid on it. Cook it on high for 2 hours. And then we've got this beautiful baguette. We're going to toast up and serve it on that. Ooh fancy. Gonna be good. Alright the spinach artichoke dip is almost done. It smells good guys. It does smell good. It just need to be stirred up. But we're going to toast this first. I've got a nice French baguette. It's a big baguette. Alright. And we're just going to slice it into some slices. Toast this up. Now, you could eat your spinach dip with chips. You could eat it with toasted bread like this. You could eat it with veggies too. That's another great addition. Oh, you know what else you could do? If you're trying to do low carb. Uh huh. This is brilliant. Why have I never tried this? Instead of using tortilla chips. Get yourself a low-carb tortilla. There's a lot of different brands that make em and they're all really good. Toast it in the oven. Cut it into into like trying. Cutting that knife at me a lot. Sorry. Cut triangles, toast it in the oven and then you have yourself some low-carb spinach dip with your chips which is essentially just the low-carb tortillas baked to a crisp. Isn't that good? That looks good, yes. Alright. So, we're going to put that in the oven just on a light broil to toast it up a little bit in a soup. Alright, I have a favor to ask. I need y'all to settle with the bake. So, I just put the bread in the oven and then we're left with this little piece here which I call the in piece. It's the butt. What do you call it? What do y'all call this? Kyle says it's called the butt. I just called it the end piece. The butt of the bread. Tell me in the comments what you call this. I'm very curious to hear your response and see if you can tell us who the winner is because I say it's just the is there a crack in it? Yay. Our professional chef just burnt bread. You burnt bread. So, all of that cheese, the spices, the milk, all of that is just going to get stirred together into a delicious dip and after stirring, you could even let it bake for another, you know, five, 10 minutes or so if you prefer and that's going to make it even more melty. Alright, well, let's try it. But I'm impatient. So, we're going to go ahead and just try it just like it is. Okay, it's a little bit messy but it's going to be good. Ready to try it? Is it going to burn my mouth? Probably. So is it good? Oh my gosh. Like on a scale of one to 10, good. How is this recipe? This is an eight. This is definitely just as good as any restaurant.
