Creamy White Bean Soup
Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened, about 5–7 minutes. Add beans, broth, thyme, and paprika. Simmer for 15 minutes. Blend half the soup until creamy using an immersion blender or by transferring to a blender. Return to the pot. Stir in cream, season with salt and pepper, and simmer for 5 more minutes. Serve hot, garnished with fresh parsley.
