Makes 4-6 servings 14 oz rice noodles (stir fry or pad thai noodles) 1 tb olive oil 1 lb boneless skinless chicken thighs, cut into bite size pieces 2 tb low sodium soy sauce 1 cup bean sprouts 1 red bell pepper, seed removed and sliced thin 1 cup shredded carrots 3 cloves garlic, mashed  2 eggs 1 cup green onions, sliced thin (this is ~1 bunch) ½ cup cilantro 1 lime, juiced 1/2 tsp red pepper flakes  SAUCE 1/2 cup low sodium soy sauce or tamari 2 tb toasted sesame oil 3 tb fish sauce 1/3 cup coconut sugar  3 tb rice vinegar 1/4 cup creamy natural peanut butter 1 tsp ground ginger  GARNISH
