Ingredients: Cookie: * 1 cup unsalted butter, melted * 1 1/4 cup packed brown sugar * 1/2 cup granulated sugar * 2 large eggs, room temp * 1 1/2 tsp pure vanilla extract * 3 cups all-purpose flour * 1 tsp baking soda * 1/2 tsp salt Blueberry Filling: * 1 pint blueberry container * 1/3 cup sugar * 2 tbsp lemon juice * 1-2 tbsp flour Crumb: * 1/2 cup flour * 1/2 cup brown sugar * 1 tsp cinnamon * 4 tbsp unsalted butter, melted Drizzle: * 1/2 cup powder sugar * 1 tbsp milk Instructions: * Preheat oven to 350°F. Spray muffin pan with baking spray. * Place melted butter in a medium bowl. Add both sugars and mix on low speed till smooth. Mix in eggs and vanilla extract till combine. * Mix flour, baking soda and salt together. Slowly mix in flour mixture, 1/2 cup at a time. * Spray muffin pans with baking spray. Scoop cookie dough into muffin pan using a medium ice-cream scooper and press down a cavity in the center of the cookie. Bake for 15-18 minutes. * While baking make blueberry filling in a medium saucepan. Add blueberries, sugar and lemon juice. On medium heat stir till blueberries soften. Add in flour to thicken filling. Stir till combine. Turn off heat and make crumb. * Make crumb by combining flour, sugar, cinnamon and melted butter. Using a fork combine together. Heat in microwave for 45-60 seconds. Remove and mix with fork. * Remove cookie cups from the oven and let cool for about 10-15 minutes. * Make drizzle by combining powder sugar and milk. Place in piping bag. * Once cookies are cooled remove from the pan. Using a small spoon scoop berry filling into center of cookie cup. Top off with crumb and drizzle icing.
