There are many variations of tamales in Colombia, but they all have something in common and that is that Colombian Tamales (Tamales Colombianos) are all wrapped in banana leaves. I am going to post many types of tamales recipes in my blog but to start let me introduce you the Tamales Antioqueños, from the region.

Ingredients

Meat
• 2 lbs Pork, bone in ribs
• 1 lb Pork belly
• 1 1/2 lbs Pork meat
Produce
• 2 lbs Banana, leaves
• 1 cup Carrots
• 4 Garlic cloves
• 1 Green bell pepper, large
• 1 Onion, large
• 1 cup Peas, fresh or frozen
• 3 Potatoes, large
• 1 Red bell pepper, large
• 4 Scallions
Condiments
• 1/2 cup Marinade
Baking & Spices
• 1 lb Corn meal, yellow precooked
• 2 Salt
Nuts & Seeds
• 4 tbsp Cumin, ground
Frozen
• 1 Water and salt to cook the tamales
Liquids
• 7 cups Water
Other
• 2 tablespoons sazon Goya with azafran or color
• String
