The Bombay sandwich is an iconic sandwich that’s a part of the Indian family of street food, lavishly adorned with butter and served hot, straight out of the grill with a spoonful of chutney and ketchup. If you’re up for it, I recommend giving the toasted sandwich a brush with a little bit of salted butter just before serving

• 1 Chilli serrano or thai chilli, green

• 1 bunch Coriander

• 1 Cucumber, medium

• 1 tbsp Ginger

• 1 bunch Mint

• 1 Red onion medium (about 260g)

• 1 Tomato (about 180g), medium

• 1 Waxy potato (about 350g), large

Condiments

• 1 Ketchup to serve

• 2 tbsp Lime juice

Baking & Spices

• 1 tsp Black pepper, ground

• 8 Peppercorns, black

• 1 Red pepper (about 300g), medium

• 1 Salt

• 1 Sea salt, fine

Nuts & Seeds

• 1/2 tsp Cumin, toasted ground

• 1 tsp Cumin, ground

Bread & Baked Goods

• 8 slices White sandwich bread

• 110 g Butter, unsalted

Other

• 2tsp amchur (mango powder)
