Vegan Victoria sponge is a dairy-free and eggless take on this classic British cake. Two layers of fluffy sponge topped with creamy frosting, strawberry jam and fresh strawberries. Can be gluten-free too.

• 500 g Strawberries, fresh

• 450 ml Soy milk
Condiments
• 150 g Coconut oil or vegan butter block
• 30 ml Lemon juice
• 160 g Strawberry jam, quality
• 2 tsp Vanilla extract or paste
Baking & Spices
• 430 g Ap flour or gf flour mix
• 2 1/2 tsp Baking powder
• 3/4 tsp Baking soda
• 30 g Cornstarch / cornflour
• 2 tbsp Icing sugar
• 1 tsp Lemon extract
• 1/2 tsp Salt
• 300 g Sugar
• 2 tsp Vanilla extract
• 250 ml Whipped cream, vegan
• 1/2 tsp Xanthan gum* (only if using gf flour)
