Vegan Victoria sponge is a dairy-free and eggless take on this classic British cake. Two layers of fluffy sponge topped with creamy frosting, strawberry jam and fresh strawberries. Can be gluten-free too.

2 1/2 tsp Baking powder
3/4 tsp Baking soda
30 g Cornstarch / cornflour
2 tbsp Icing sugar
1 tsp Lemon extract
1/2 tsp Salt
300 g Sugar
2 tsp Vanilla extract
250 ml Whipped cream, vegan
1/2 tsp Xanthan gum* (only if using gf flour)
