Pamela Salzman on Instagram: "Pear Carpaccio. This is such a fun fall salad and it is so quick and easy! Not everyone has a good relationship with her/his mandolin and I understand. Many people think they're dangerous, but it did help me get nice thin slices of pear. I used Bartlett pears which were firm but ripe. That's the key. Then toss a quick salad with arugula or frisée and add pomegranate, nuts and your favorite cheese. I think blue cheese would be amazing, but Hubs refuses to eat it. 🙄 Pears arugula flaky salt and black pepper to taste olive oil balsamic vinegar walnuts pomegranate seeds feta I do have this typed up with step-by-step instructions and other options for the nuts and cheese. Full recipe down below 1 head romaine washed and cut Bread of choice (I used baguette) EVOO, S&P 1tsp Dijon mustard 2-3 brown anchovies 1 fresh egg yolk 1 large clove of garlic crushed to a paste Juice of half a lemon 1/2 Tbsp Worcestershire 1/3 cup Parmesan and more as you see fit EVOO to emulsify S&P to taste -Prep vegetables and grate 1/3 cup Parmesan -Toss cubed bread in EVOO and S&P, bake at 375 for 10 minutes. Begin checking at 8. -Follow steps seen in video to make dressing. -Combine ingredients with dressing. Add cheese as desired. Finish with black pepper. Enjoy.
