HALLOUMI & QUINOA CHOPPED SALAD 🥗
Ingredients: 1 sweet potato cubed 1 tbsp olive oil sea salt 1/2 cup quinoa/grain 200g cherry tomatoe 4 baby cucumber 1/2 cup pomegranate arils 1/4 cup flaked almonds roasted 1/8 parsley, leaves & stems chopped 1 tbsp chopped red onion, 200g halloumi sliced Dressing: 2 tbsp olive oil, 1 tbsp white wine vinegar, 2 tsp maple syrup, 2 tsp Dijon mustard -Preheat the oven to 200C and line a tray. Spread sweet potato, drizzle with oil, season with salt and pepper, and bake for 30min. Cook quinoa as per instruction -For the dressing, whisk all ingredients in a jar and season -Pat halloumi dry, heat a pan over a medium high heat and lightly grease with olive oil. Cook for 1-2min per side until golden, and chop -In a bowl combine all of the salad ingredients. Pour dressing and serve! 🎥 @jshealth
