46K reactions · 4.1K shares | Tomato Soup and Crusty Crostini ⬇️ Tomato Soup Ingredients: • 2½ lbs ripe tomatoes (Roma or vine-ripened), halved • 1 small yellow or red onion, quartered • 1 red bell pepper, sliced (optional) • 1 whole head of garlic (top sliced off to expose cloves) • 2–3 tbsp olive oil • ½ tsp chili flakes (or more to taste) • Salt & black pepper to taste • ½ tsp dried thyme or Italian seasoning • 1½–2 cups vegetable or chicken broth • 1 tbsp butter or ½ cup heavy cream (optional) • Handful of fresh basil Garlic-Parmesan Crostini: • Baguette or crusty bread, sliced • 2–3 tbsp softened butter • 2–3 garlic cloves, finely chopped • Fresh or dried parsley • Grated Parmesan cheese Instructions: 1. Roast the veggies: Preheat oven to 425°F. On a sheet pan, arrange tomatoes (cut side up), onion, bell pepper, and whole head of garlic (cut side up). Drizzle with olive oil. Sprinkle with chili flakes, thyme, salt, and pepper. Roast for 35–40 minutes until caramelized. 2. Make the crostini: While veggies roast, mix softened butter with chopped garlic, parsley, and Parmesan. Spread onto sliced bread. Bake at 375°F for 10–12 minutes or until golden and crispy. 3. Blend the soup: Let garlic cool slightly, then squeeze roasted cloves into a blender. Add roasted veggies and juices, basil, and 1½ cups broth. Blend until smooth. 4. Simmer: Transfer to a pot. Simmer 10–15 minutes. Stir in butter or cream if using. Adjust salt and broth for texture. 5. Serve: Ladle soup into bowls.
