They make a fantastic lunch addition or a nutritionally packed snack. I’m building up ideas so that I’m ready to make healthy snacks when we have loads of guests all through the … dare I say Christmas period 🎄 This is another Belinda recipe. 🫶 This made 14 Ingredients: 250g pumpkin seeds +a few for toppings 250g baby spinach 3 eggs Stripped leaves from a sprig of Rosemary 1tbsp extra virgin olive oil 50g of goats cheese (crumbled) Salt and pepper to taste On one tray I added an extra sprinkle of my savoury mix and loved it. (The seed mix: black and white sesame, poppy seeds, dried onion flakes, garlic granules, salt & pepper.) As with everything, you can add extra herbs if you fancy making this you own. Directions: Get the oven warmed up to 180 degrees and grease your doughnut moulds. Wiz up the pumpkin seeds in a blender until they become a flour. In a large blender add the ground seeds, eggs, rosemary leave, oil, salt , pepper and spinach. (I had to add half of my spinach, blitz it down then add the other half) Place the mix into the moulds (just over 3/4 fill) leaving enough space to add the toppings without them escaping over the top. Sprinkle the salt, goats cheese and seeds and bake them in the oven for 20mins. You want them crispy on the top and cooked through. Let them cool and pop them in a cooling rack.
