Preparation: 15 minutes Cooking Time: 15 minutes Serving Size: 2-3 servings Ingredients 250 g Boneless chicken thigh/breast 300 g Flat rice noodle (cooked/boiled) 2 tsp minced garlic 2 tsp minced ginger 1 bell pepper 3–4 Spring onions 150 g Bean sprouts 2-3 tbsp Vegetable oil For Chicken Marinade 1 tbsp Light soy sauce ¼ tsp Baking soda 1 tsp Sesame oil For Stir Fry Sauce 2 tbsp Oyster sauce 1 tbsp Light soy sauce 2 tsp Dark soy sauce 2 tsp Sugar 1 tbsp Rice vinegar 2 tbsp Water 1 tsp sesame oil Instructions Slice the chicken and marinate it with the ingredients listed above. Set aside for 10–15 minutes. Mix the stir-fry sauce in a small bowl and set aside. Prepare noodles according to packet instructions and rinse with cold water. Heat a pan over medium-high heat. Add garlic and ginger, stir briefly until fragrant. Add the marinated chicken and stir-fry until it's about 80% cooked. Add the bell peppers and stir for a few seconds. Add the noodles and pour in the sauce. Stir well until everything combines well, the sauce is absorbed, and the noodles are cooked through. Add bean sprouts and spring onions.
