I wanted to do a Jamaican influenced vegan dish. I decided to do a play on Rasta Pasta. This Rasta bowl recipe has 5 depths of flavors: smoky, savory, spicy, sour, and creamy.

Ingredients

Produce
• 1 tbsp All-spice berries, whole
• 1 tsp All-spice berries, ground
• 1/2 bunch Cilantro, fine
• 4 sprigs Cilantro garnish
• 6 Garlic cloves
• 1 1 inch piece Ginger, medium
• 2 bunches Green onions root removed, medium
• 2 Limes, juice of
• 1 Onion, medium
• 4 Plantains, ripe
• 1 Scotch bonnet pepper
• 2 Shallots washed and sliced 1/4 - 1/2 inch, medium
• 1 Sweet potato peeled sliced 1/4 inch, large
• 6 sprigs Thyme, fresh
• 2 Zucchinis
Canned Goods
• 1 13 oz. can Full coconut milk
• 6 oz Tomato paste
• 3 1/2 cup Vegetable stock, unsalted
Pasta & Grains
• 2 cups Basmati or white long grain rice
Baking & Spices
• 7 tbsp Avocado oil
• 1 tsp Black pepper
• 1/4 tsp Cinnamon
• 3 tsp Kosher salt
• 2 tbsp Raw cane sugar

• 1 cup White vinegar

• 3/4 cup Water

• 1 Green bell pepper cut in half (seeds and pith removed)
• 1 Red bell pepper cut in half (seeds and pith removed)
