This light dish is rich in flavor but loaded with healthy veggies. This zucchini risotto (or courgette risotto as it’s known across the pond!) is a great way to sneak in extra veggies. Not only does this recipe have three medium sized zucchini but it also has a large shallot, some garlic, and baby spinach!
