1.4M views · 6.5K reactions | EGG, TOMATO & BACON TORTILLA BREAKFAST WRAP Serves 1 Ingredients: 1 medium/large tortilla 2-3 eggs, lightly whisked Sea salt & cracked black pepper 1/2 tomato, sliced 3 rashers bacon, finely chopped 2/3 cup grated cheese (mozzarella or tasty) 2 spring onion, finely sliced Method: Place a large frying pan (one that is about the size of the tortilla) onto medium heat. Add the bacon and let it cook for 2-3 minutes. Then lay the tomato slices on either side of the frying pan (to leave the middle clear to fold in half). Whisk and season the eggs with salt and pepper. Pour in the eggs onto the tomatoes and bacon. Add half the grated cheese and cook for 3 minutes. Place the tortilla on top of the eggs, then flip the tortilla over with a spatula or dinner plate, so that the tomato is facing up. Slip it back into the frying pan. Add the spring onion and remaining grated cheese. Place the lid on and let the cheese melt for 2 minutes. Fold the right half of the tortilla over so it sits on top of the left side and remove from the pan.
