Using admin credentials and working in '/files' folder I can read, delete, rename existing files and upload new files or create new folders, but I can't save/modify existing files.

Checked it using structr-ui-2.1.0-20160929.080622-14 snapshot and clean instance. The problem is present in previous snapshots too.
