Recipe (serves 2) • 1 cup of cooked quinoa • 3 tbsp pesto • 1/4 cup frozen edamame beans • 1/4 cup frozen peas • 3 spring onion, roughly chopped • 1/4 cup sundried tomato • 1/4 cup feta, roughly chopped • 1/4 cup flaked almonds • Few mint leaves, roughly chopped • Pinch of salt and black pepper 2 big handfuls of baby spinach Dressing: • 4 tbsp olive oil • 2 tbsp apple cider vinegar • 1 tsp Dijon mustard • 1 tbsp honey (or maple syrup) Pinch of salt and black pepper Cook quinoa according to packet instructions.
