Grandma's Onion Soup
6 large onions, thinly sliced 4 cups beef broth 1 cup white wine (optional) 2 tbsp butter 1 tbsp olive oil 1 bay leaf 1 tsp thyme Salt and pepper, to taste 4 slices baguette, toasted 1 cup Gruyère cheese, grated Preparation Sauté onions in butter and oil until deeply caramelized. Add wine, broth, bay leaf, thyme, salt, and pepper; simmer for 30 minutes. Pour soup into bowls, top with baguette slices and cheese.
