Andouille Cornbread Dressing

This recipe is adapted from the book Emeril's New New Orleans Cooking and it's delicious and easy to make. Though there is nothing like serving it hot from the oven, it can also be made a ahead of time for easy entertaining.

• 1 lb Andouille sausage or other smoked sausage

• 1/2 cup Celery
• 3 tbsp Garlic
• 1/2 cup Green bell pepper
• 1 cup Green onion
• 1 cup Onion
Canned Goods
• 5 cups Chicken broth
Baking & Spices
• 1/4 Black pepper, freshly ground
• 1/4 tsp Cayenne
• 1 tbsp Emeril's creole seasoning
• 1/2 tsp Salt
Oils & Vinegars
• 1/4 cup Olive oil

• 6 1/2 cups Jalapeno corn muffins
