8.8K views · 117 reactions | Welcome to Day 9 of my 🥭 Summer Mango Series 🥭 I’m a Dietitian & today we’re making a Spicy Mango Rice & Coleslaw salad with a delicious tahini dressing 🤤 ✨ Follow @nourish_naturally for more easy healthy recipes & get my meal prep ebook linked in my bio ✨ Ingredients Salad 2 cups cooked and cooled rice of choice 2 Tbsp toasted sesame oil 1 Tbsp chili flakes 1 Tbsp soy sauce 2 cups coleslaw mix 1 cucumber, diced 1 cup edamame, shelled 1 ripe mango, sliced ⅓ cup shallots, sliced ⅓ cup roasted cashews, roughly chopped Tahini Dressing 2 Tbsp tahini 4 Tbsp water 2 Tbsp toasted sesame oil 2 Tbsp rice wine vinegar 2 tsp soy sauce 2 tsp chili flakes 1 tsp sugar Method: Mix rice with toasted sesame oil, soy sauce and chili flakes. Spread onto a pan and heat over medium heat until crispy (this step can also be done in the oven). Remove and allow to cool. Place into a large serving bowl with remaining salad ingredients. Mix dressing ingredients together (add more water to thin if necessary) and pour over salad. Toss to combine.
