If your kitchen is hot, place the mixer bowl and paddle in the freezer for ten minutes before mixing the crust. Makes enough for 2 single-crust pies or 1 double-crust pie 2 1/2 cups (325 g) all-purpose flour 2 tablespoons light brown sugar 1¼ teaspoons fine salt 14 tablespoons (195 g) cold unsalted butter, cut in ½-inch cubes 4 ounces (115 g) cold full-fat cream cheese, cut in 1-inch cubes 2 ½ tablespoons cold water Combine the flour, sugar, and salt in the bowl of a stand mixer bowl fitted with the paddle attachment. Mix on low for 30 seconds to combine. Add the butter and cream cheese all at once and mix on low for 2 to 3 minutes, or until the mixture looks like breadcrumbs with a few pea-sized pieces of butter throughout. Drizzle in the water and continue to mix on low for 10 to 15 seconds, or until small clumps of dough start to form; the clumps will look a bit like popcorn. Turn the crumbs out onto your work surface and gather them into a mound. Press and knead the mass 3 or 4 times until the mixture looks cohesive with no dry spots. For a double-crust or lattice-crust pie, form the dough into two disks using ⅔ of the dough (about 15 ounces) for one and the remaining ⅓ (about 9 ounces) for the second. For 2 single-crust pies, divide the dough into two equal portions. Flatten into 1/2” thick disks. Wrap both portions in plastic and chill for at least two hours or up to two days. The well-wrapped dough can be frozen for up to 2 months. Find this recipe and more in my cookbook, Bake Your Heart Out #pie #piecrust #baking #baker #pastry | Dan Langan | bakedbydan · Original audio

Crust: 1 ½ cups chocolate baking crumbs ¼ cup unsalted butter, melted In a small bowl, mix the above ingredients together, then dump into a 9-inch pie pan. Use the bottom of a regular cup or measuring cup to smooth the crumbs into an even crust along the sides and bottom of the pan. Bake at 350°F for 8-10 minutes then set aside to cool. Filling: 2 cups milk ½ cup granulated sugar ¼ cup cornstarch ¼ teaspoon salt 3 large egg yolks 1 teaspoon vanilla extract or 1 pouch (9 g) vanilla sugar Continuously whisk the above ingredients together in a small saucepan on low heat, until the mixture thickens and begins to bubble (about 10 minutes). Sieve the hot mixture into a heat-proof bowl that contains 8 ounces of semisweet chocolate. Fold the chocolate and hot mixture together until the chocolate fully melts and is thoroughly combined. Immediately pour the hot filling into the cooled pie crust. Cover, and refrigerate until cold (I did 4 hours). Alternatively, you could freeze it to have a more ice-cream-like consistency. Topping: 1 cup cold whipping cream 2 tablespoons powdered sugar 1 teaspoon vanilla extract or 1 pouch (9 g) vanilla sugar In a medium bowl, whip together the above ingredients until stiff peaks form. Spread or pipe this on top of the cold pie. Chocolate drizzle: 2 tbsp semisweet chocolate chips Melt in the microwave, then use a ziplock bag with a small cut in the corner to drizzle the chocolate on top of the pie.
