Stir continuously to form a roux. 2. Cook the roux for about 3 minutes, browning it. Be sure to stir constantly to avoid burning. 3. Slowly whisk in 1 cup of chicken broth. Continue to add more broth until you reach your desired gravy thickness. For a thinner gravy, add more broth than the recipe calls for. 4. Strain the gravy and serve! NOTE: If you don’t have enough drippings from the turkey, simply add butter or oil until you reach 1/4 cup. You can adjust the recipe by using a combination of turkey drippings, butter, or oil. Just remember, the most important part is to use equal parts fat (drippings, butter, or oil) to flour.
