The best crockpot soup | The best crockpot soup I make tomato soup in my slow cooker with homemade croutons. | By Rick's Friend Justine | Alright, that was five pounds of tomatoes in my crockpot. I'm coming in with some onions and I'm going to use about half of these onions that want to fill this up. Actually, you know what? I'm going to use all these onions. I really like onions and that was one onion that we sliced. Oh, it smells so good. I'm going to come in with one bulb of garlic that is ready to go. Now, I have here some basil and we're just going to go ahead and cut this basil right into our crockpot with our onion and with our tomatoes. This is going to be such an easy and delicious you know crockpot meal for the upcoming colder seasons. I love making this when I'm feeding a big crowd. It is such a crowd pleaser. I think I need more basil than that so I'm just going to go ahead. Make sure you don't get any stems in there because that will not go over well. Okay. That looks like enough basil. Now I'm coming in with some red bell peppers. This is two red bell peppers that I quartered and we're putting them right in our crockpot with our tomatoes, our onions, and everything good. This is going to be so good. You guys, all my favorite things in the crockpot just like this. Oh, yeah. Okay, perfect. Alright, now we're going to season this. I have some Italian seasoning and we're just going to sprinkle that right on top of the entire crockpot. Now, this is a lot of servings so you gotta make sure to season it properly. We're of course going to add some you need some salt with all of those tomatoes it will just really compliment it and bring out those flavors beautifully okay perfect now with salt we always gotta do some pepper now if there's any of these seasonings that you don't like you can totally skip them I'm doing this to my liking and you can do it to your liking now I'm going to add some red pepper crushed and we gotta make sure to really get a good amount of this out because this is going to shine beautifully with all of those acidic flavors. Okay, we're almost done here. Now, I'm going to add four cups of my vegetable broth right into our crockpot. That's going to help those seasonings travel down to our tomatoes, to our onions, to our garlic and it's going to bring the perfect amount of moisture that we're going to need for this dish. Oh my. Okay. So four cups is this entire container. Beautiful. Okay. This is ready to start cooking. We're going to put our lid on top and put this on high. Alright, our crockpot is almost ready. So, I'm going to grab these French sandwich rolls. They're on clearance which is perfect for what we're making. I think I'm going to start off with two of these and we are going to cut these into small pieces just like so. Oh my goodness. You can use whatever bread you want for this and if they're a day old, it's even better but this is going to go so beautifully with what we're cooking in that crockpot and I cannot wait to share how easy this is a B. So we're going to cut him just like so and then probably one more time for even smaller pieces. Alright, so we just cut it horizontal. Now, I'm going to bring in my sheet pan and we are going to spread these out with some distance apart. Okay, I think I'm going to add one more loaf. What do you think? Yes. Alright. So, I ended up using all four of those sandwich rolls. Now, I'm coming in with my olive oil and we are going to just drizzle this right over our bread pieces. Make sure a little bit gets on each bread piece just like so. Oh my gosh. I see a few that are missing. It's okay to add a little too much but you don't want too little. Now, the only season I'm going to add to this is some garlic salt but you could add pepper, Italian seasoning, whatever you like. I'm just keeping it simple so that it doesn't take away from our main dish. Okay, my oven is set to 450 and these are going to be in there for about seven to 10 minutes. Oh my goodness. Alright. These are homemade croutons. Look how perfectly crisp they are. We're going to go ahead and put these to the side and grab our crockpot. Alright, it's been four hours on high. Let's go ahead and turn this off and let's check it out. Whoo. Look how steamy and delicious this looks but you know what this is? This is tomato soup. So, we gotta go ahead and get our up all the tomatoes and the bell peppers. Let's go ahead and go in. Go right on those bell peppers until it is all liquefied right in your crockpot. I love this thing. It is KitchenAid and it is super easy with not spilling things. Look how great this is coming out. Whoo. I really love doing this with the hand blender because it just makes it super easy. You could probably even try using a hand mixer but if you don't have a crockpot, you can make it in a pot and if you don't have a hand blender, you can put it all in your regular blender and it will be all blended up until it is soup. Oh my goodness, it smells incredible. It's almost fully blended. We don't want any chunks of tomato. We only want a nice, delicious soup. Alright, this is ready. We used our hand blender for about one to 2 minutes. Alright, it's a little foamy from all the blending but there is tomato soup in there. So, let's go ahead and fill up our bowl, the perfect fall time crockpot soup. Oh see, do you see it right there? Look how delicious and flavorful it looks. Oh, it looks great. Yummy and then of course this is optional but I am the kind of girl that likes some half and half in her tomato soup so I'm just going to add little splash and then we gotta add our homemade croutons oh yeah look at them just float right on top of our delicious tomato soup oh my goodness now if you just let this sit on warm the foam will go in and it will look like the most beautiful soup don't you Time to give it a try. That's incredible you guys. You gotta try it.

This is the first part of this simple and easy recipe that's going to bake this in the oven for 30 minutes at three hundred fifty, right? 30 to 40, so easy. I'll see you in one sec. Okay, our tomatoes are ready. Now, it's time to cook this pasta. I have here some molizana, the fuzzilli, this is some fuzzilli, this is bronze cut. Let's put them right in oh salted water well be careful when it's very hot the Just like that. And look at this beautiful pasta. We want to cook this nice and al dente and then we're going to mix it with our sauce. Oh my goodness. Our pasta is ready. Let's give it a nice stir. Look at that nice and al dente. Let's turn the heat off. And now look at our tomatoes. Oh my goodness. How deliciously looking are there. Now first step, we're going to take the stem out just like that with your fingers. There you go. Okay? Now they're going to be very hot so you might want to wait a little bit in all my life now my fingers don't even feel anything so I'll be okay but you know be careful. Okay because they got water in there. Water is very is very hot. And now simply take this beautiful tomatoes. Just like that and we put them in our mixer here. Okay? We're going to put all this tomatoes into the mixer just like that. Very Okay? Our oven is our oven is ready and it's for another recipe and if you want to see it, you better stay tuned on the page. There you go. We got all this here. Now look at all this liquid that we got here. You see? We got all the caramelized garlic with the oil and the onion and this we definitely do not want to you know no pudding there. We have to put all this goodness in there, okay? So we're going to put it right here, we scrape off this and we simply just put it all this goodness in there, okay? All this onion, the garlic, there you go. Beautiful. Okay guys, this is so easy, right? Bare with me. Now, what we're going to do for the perfect sauce, okay? We're going to add some nuts, okay? We have some walnuts. This is the house but you can use the the one that already chopped but it won't really make a different and we're going to add about two, three handful depending on the size of your tomatoes. It's just a little bit for the flavor and we before we turn it on, we going to add a nice amount of fresh grated parm right in there. All in there. So yummy or cheese, super nice, you know, or or or or sauce super nice and flavorful with the parm cheese. There you go. And and now before we just need one last thing go to make it nice and creamy because since we put the nuts we want it to be nice and creamy we have some beautiful Lana Lakes heavy whipping cream let's just put about a cup of that there you go and oh my goodness guys it's now time to drain our pasta and while I drain the pasta we're going to turn this on and this is going to be an incredible cream look at that. One, two, three. Perfect. There you have it. Nice and creamy. Look at this. We are going to gently pour this insane cream that we made in seconds with amazing ingredients all onto our pasta. Let's see if we need all of it actually. Okay? Cuz we want the pasta nice and creamy, you know, but not soup, okay? Now, you know, just whisk this all up. We're going to turn the heat on. Cuz we want the pasta to kind of cook with the sauce and with the heat, it's going to change color a little bit as well, okay? I say It looks it looks it looks perfect. Let's give you a nice few toasts. Look at that. Look at. Nice and creamy. Boom. And this is also nice, full of healthy protein with the the nuts protein, the walnuts protein. Boom. Look at that. Wow. That looks insane. Insane. Alright. To eat this up. Little bit of fresh parm. As you know, we're making things nice and boujee here. Boom boom boom. And of course a little bit of the fresh basil. Now let's try. Let's try here. I want that basil there. Look how creamy this pasta is. That's incredible. Boom. Wow.
