Have you tried the cheesecloth method?! The Best Turkey Ingredients * turkey, giblets and neck removed * 2 sticks unsalted butter, at room temperature * 2 tablespoons fresh sage * 2 tablespoons fresh thyme, plus more for stuffing inside * 3 tablespoons fresh parsley * zest of 1 lemon * 3 tsp salt * 2 tsp pepper * 1 piece of cheesecloth large enough to cover turkey * 2 lemons, halved * 1 garlic head, tips sliced off * 1 yellow onion, halved * 7-8 cups low sodium chicken or turkey broth Directions: 1. Bring turkey to room temp hours before cooking (depending on size) I like to take the plastic off and drain all the liquid. Leaving it uncovered for a couple hours gives the skin a chance to dry out giving you the crispiest skin. 2. Mix fresh herbs & 1 stick unsalted butter, lemon zest, salt & pepper into a bowl and use to heavily coat turkey on inside and outside skin. 3. Place halved onion, halved lemons, and garlic head inside turkey cavity with sprigs of thyme. 4. Melt 1 stick of butter and place in bowl. 5. Preheat oven to 450. 6. Run cheesecloth under water and wring out. Put cheesecloth in bowl with melted butter and soak it all up. 7. Place buttered cheesecloth completely over turkey and place in roasting pan. Pour 4 cups of chicken broth in bottom of roasting pan. 8. Place turkey in oven and cook for 45 mins at 450. Then check turkey, turn temp down to 350 and cook your turkey for the rest of the time (based on your turkeys weight). You can baste turkey 1-2 times during roasting if you’d like. Half way through rotate pan in oven and add 1-2 cups of chicken broth if needed. 9. When time is up, take pan out of oven and allow turkey to rest for at like 40-60 mins depending on turkey size. Tent with foil during resting. 10. I’ve gotten tons of messages about how to cook the perfect turkey so I will be posting various turkey and Thanksgiving recipes this week and next! There’s a few things we need to prioritize: Crispy skin, juicy white meat and timing… The key to all of these is “spatchcocking”. Crispy skin: The flat shape of a spatchcocked turkey faces all the skin upwards, allowing us to cook evenly at a higher temp.
