One-Pot Macaroni Cheeseburger Soup
1 lb. ground beef 2 tsp dried oregano 2 tsp dried thyme 6 tbls butter 1 yellow onion, diced 1 c sliced carrots 1 c sliced celery 5 cloves garlic, minced 4 tbls flour 8 c chicken broth 8 oz uncooked elbow macaroni 1 c heavy cream 8 oz sharp cheddar cheese 1 tsp white balsamic vinegar Kosher salt fresh pepper 2 tbls olive oil Heat oven to 400 degrees. Heat a large pot adding ground beef, 1 tsp oregano, 1 tsp thyme, and salt/pepper. Brown beef, remove from pan and set aside. Heat butter adding onion, carrots, celery, and salt/pepper. Cook 10 min reduce heat and add garlic, 1 tsp oregano, and 1 tsp thyme, cook one minute. Add flour and stir to coat veggies. Cook one minute, stirring frequently. Stir in the remaining chicken broth, meat and macaroni noodles. Cook 5-7 minutes.
