• 750 g Chicken portions on the bone

• 20 Chillies, dried red
• 5 medium cloves Garlic
• 6 Kaffir lime, leaves
• 1 Lemongrass
• 5 stalks Lemongrass
• 1 Onion, medium
• 2 heaped tbsp Tamarind pulp
• 500 ml Water for soaking chillies and tamarind, very hot
Canned Goods
• 125 ml Coconut milk
Condiments
• 1 tbsp Lime juice, fresh half
Baking & Spices
• 5 cm Galangal
• 1/2 tsp Salt
• 1/2 tsp Turmeric, powder
Oils & Vinegars
• 2 tbsp Vegetable oil
Liquids
• 1/4 cup Water
