Ingredients For the filling: • 2 boiled sweet potatoes, diced and pan-fried • 1/4 cup corn, blanched • 1/2 red bell pepper, diced • 1/2 green bell pepper, diced • 4 pickled jalapeños, diced For the dressing: • 1/2 cup hung curd • 1 tsp hot sauce • 1/2 tbsp mint leaves • 1/2 tbsp lime juice • Salt & pepper, to taste For assembly: • 1 large tortilla wrap • Lettuce leaves Method • Boil the sweet potatoes until soft and tender. Let them cool, then peel and chop into small pieces. • Heat oil in a pan and fry the sweet potatoes until crispy.
