This recipe made it into the book because it’s such a family favorite. I always make more Ham than I know we’re going to eat for the holidays just to have leftovers so that I can make these. Ham, Cheese and Scallion Muffins use up some of the leftover ham and cheese from the Charcuterie board. The recipe calls for Gruyère but you can use whatever cheese you have. For this batch I used Gouda because that’s what I had! They are excellent on their own, as a side to a bowl of soup or sliced open with a fried egg on top. When they’re firm to the touch, you know they’re done. 😋✨ Ingredients: * 3 eggs + 3 yolks * 1 cup heavy cream * 1 cup whole milk * ½ cup + 1 tbsp brown sugar * 2 tsp vanilla extract * 1 brioche loaf, cubed * 5 oz bittersweet chocolate chips (70% cacao) * 5 oz white chocolate chips * whipped cream Directions: 1. Preheat oven to 375°F. Line a cupcake pan with 12 liners. 2. Whisk eggs, yolks, cream, milk, ½ cup brown sugar, and vanilla. 3. Mix brioche cubes with egg mixture. Fold in chocolate. 4. Fill cupcake liners and sprinkle with 1 tbsp brown sugar. 5. Bake on a baking sheet for 15-20 mins until firm. 6.
