I'll start with our Lipton onion soup mix. I'm using two packets because I doubled up the recipe. Recipe calls for two pounds of meat. This is closer to four. And One can. Alright. Just going to give this Good shake. Go. That's one. And that is two. Oh, man. This is so easy. Looks so good. Now, we're just going to get this mixed up. I usually like to do this in a crock pot but I saw this recipe where they do it in their oven and just a nine by 13 baking dish and I want to give this a try. So, just kind of get this a nice mix. I use my meat masher here. Also doubles as an excellent mixer. Alright, this is looking good. We're just going to cover this up. We're going to put this in the oven at 300 degrees for about three hours. Alright y'all it has been three hours and our beef is ready. Now we've been letting this cool for about I don't know about 15 minutes. Um but wow. Y'all this came out so good. This gravy looks amazing. I snuck a little taste already off camera. And it is absolutely delicious. Let us give this a proper taste. Gonna grab our plate here. Delicious. Baby Red's mashed potatoes. And you know I think this would be really good with rice or noodles. We're going to put a little bit on our plate here. And y'all this is so easy. Takes a little bit of time to cook but man this just comes together so easy. Just what? Four ingredients. Can Green Chiles▪️1+1/2 tsp Cumin▪️1+1/2 tsp Chili Powder▪️1/2 tsp Garlic Powder▪️1 tsp Kosher Salt▪️3 Cups Rotisserie Chicken, skin removed and shredded into small pieces (from 1 small rotisserie chicken, white and dark meat)▪️3/4 Cup Mild Green Salsa▪️ Tacos:▪️4 Tbsp Avocado Oil, divided▪️18 Corn Tortillas (I recommend Guerrero brand)▪️1 Cup Shredded Mexican Blend Cheese, plus more for serving▪️ Toppings:▪️Shredded Iceberg Lettuce▪️Diced Onion▪️Lime Wedges▪️Sour Cream▪️ 1️⃣ Preheat your oven to 425F on convection mode (or 450F regular bake). 2️⃣ In a large pan over medium high heat, heat the avocado oil until shimmering, then add the onion. Cook for 3-4 mins the onions are starting to become translucent, then add the green chiles, cumin, chili powder, garlic powder and salt. Cook, stirring, for 1-2 more mins, then add the chicken and green salsa. Stir to combine, then remove from the heat and set aside 3️⃣ Drizzle two baking sheets with 2 Tbsp avocado oil on each. 4️⃣ Place 6 tortillas between two damp paper towels and microwave until soft and pliable, 30 secs-1 min. (Or wrap all the tortillas in foil and place them in the oven until warm and pliable, ~10 mins.) 5️⃣ Working with one tortilla at a time (keeping the others warm between the damp paper towels), rub both sides with the oil, then sprinkle on 1 Tbsp of cheese. Place 2 heaping Tbsp of shredded chicken down the center of the tortilla in a line, then fold the tortilla to create a taco. Repeat with the remaining tortillas, warming more as needed and assembling the tacos as you go. 6️⃣ Bake the tacos for 8-10 mins until sizzling around the edges, carefully flip them, rotate the baking sheets, and bake for another 8-10 mins, until deeply golden and crispy. 7️⃣ Remove from the oven and let the tacos cool on the sheet pans for 5 mins. (They will get crispier as they cool!)
