🛒 Ingredients: For the Salad: 1 can (15 oz) chickpeas, drained and rinsed 1 tbsp olive oil 1/2 tsp garlic powder 1/2 tsp smoked paprika Salt & pepper to taste 2 cups shredded purple cabbage 1 cup shredded carrots 1 cup chopped bell peppers (red, yellow, or orange) 1 cup cucumbers, diced 1/2 cup chopped green onions 1/2 cup chopped cilantro 1/3 cup crushed peanuts or cashews 1 tbsp sesame seeds (optional) For the Thai Peanut Dressing: 1/4 cup peanut butter (or almond butter) 2 tbsp lime juice 1 tbsp soy sauce (or tamari for gluten-free) 1 tbsp honey (or maple syrup for vegan) 1 tsp sesame oil 1 tsp grated ginger 1 small garlic clove, minced 2-3 tbsp warm water (to thin out)
