Ingredients: 200 g white quinoa (dry) 2 medium ripe bananas 3–4 tablespoons cocoa powder 120 ml plant-based milk (I used homemade coconut milk) 2 tablespoons peanut or almond butter 1/2 teaspoon baking powder 1 teaspoon vanilla extract (a must!) Sweetener (I used 2 tablespoons of honey) Optional additions: 1.5 handfuls of walnuts 1.5 handfuls of chocolate chips Preparation: 1. Rinse the quinoa thoroughly, then soak it in water for 6–8 hours (minimum 2 hours). Rinse well after soaking. 2. Blend all the ingredients (except the nuts and chocolate chips) until smooth. If your blender struggles, add a little water. 3. Stir in a handful of chopped walnuts and a handful of chocolate chips. 4. Grease your baking dish well or line it with parchment paper. Pour in the batter and sprinkle the remaining nuts and chocolate chips on top. 5. Baking time depends on the thickness. My pan was small (16 cm in diameter), so the brownie turned out quite tall. I baked it for 45 minutes at 180°C (356°F) to make sure it was cooked through but still moist. 6. If your pan is larger and the batter thinner, reduce the baking time accordingly. 7.
