Vegetable fritters are one of my favourite things to cook in the air fryer, they are so quick, easy and always turn out absolutely yummy 😍. Plus hardly any oil is required to get that crispy exterior 👌. This morning I've gone for carrot & courgette fritters, which I served with a smoky chilli yoghurt to dip them into (SO good 🤤), although they're also delicious served with eggs or bacon. ✨️ Top tip: crumble in 20g feta or add 20g grated halloumi to the mixture for a tasty twist! ✨️ Don't have an air fryer? No worries, the fritters can also be pan fried or oven baked, instructions for all 3 methods are below 👇. Recipe (serves 1): 🥕 Grate 1 medium (or half a large) courgette & carrot. Clean Kweens | Dietitians on Instagram: "HEALTHY CARROT FRITTERS: we’re huuuuge fans of fritters lately! Especially crispy carrot ones 👑 We find that we usually have all of the ingredients in the house already! Fab way to use up that sad bag of carrots 🥕 

INGREDIENTS:
4 carrots, grated
1/2 zucchini, grated
1/4 cup parsley, chopped
3 eggs
3/4 cup plain flour
Salt & pepper
2 tsp olive oil oil

METHOD:
1. Combine all ingredients except the oil.
2. Heat the oil in a pan over medium heat.
3. Scoop ~1/3 cup mixture into the pan.
4. Gently press down to form a fritter.
5. Cook for 1-2 mins/side or until cooked.
