Tips: Ask your local butcher for the beef shin, alternatively you could use short ribs, brisket or lamb shanks. Cooking on the bone adds flavour and be sure to tap out the soft delicious bone marrow. Browning the meat properly will add depth of flavour, and cooking low and slow helps to break down the connective tissue and muscle.

Braised beef shin                                               

Serves 4-6
Prep time 30 minutes 
Cooking time 3-4 hours 

Ingredients 
100 ml grapeseed oil 
2kg whole beef shin, bone in 
2 Tbsp flour 
50g butter
1 onion,  peeled &  1cm dice 
1 carrot, peeled & 1cm dice
1 celery stick, washed & 1cm dice
5 garlic cloves, peeled & finely sliced Beef Shin, Lamb Shanks, Connective Tissue, Braised Beef, Bone Marrow, Short Ribs, Grapeseed Oil, 4 Hours, Browning
