My Homemade Dishes We Love!

Chicken Salsa Roja 1 Large Package Chicken Drum Sticks (NOT FROZEN) 4/5 Dried Ancho Chili’s 5 Dried Chili Mexican 1/2 White Onion 5/6 Garlic Cloves (do not use minced-USE FRESH) 2 Bay Leaves 1Tbsp Salt 1 Tsp Cumin 1Tsp Oregano 1 Tsp Allspice Put all hard ingredients into large quart pot and boil until chili’s are soft. Then let cool about 10 minutes. Place everything in blender, including seasoning, then add 1/2 cup water, blend for about 3 minutes until thick and smooth! Set aside, wash chicken drum sticks. In a deep quart pot turn on medium to medium high heat. Get your sauce and pour about 1-2 cups on the bottom of pot, place some drums on top of sauce, mix until all chicken is covered, add remaining drums sticks. Keep adding sauce until it’s gone! Mix thoroughly and place lid on! Let cook about 10 minutes, Stir drums around ensuring everything is covered in your red salsa sauce! Replace lid, turn down heat to medium/ medium low and let simmer for 1-2 hours or until tender and falling off the bone, stirring once in a while. YOU’RE GOING TO LOVE THIS DISH- ENJOY! Top with fresh cilantro and sliced tomatoes like in my picture and add a shot of fresh lime juice for a zip!!!!

Homemade Crunch wrap. Man this was delicious and fun. Get the kiddos involved. Hamburger, tomatoes, red bell pepper, queso fresco, sharp cheddar, pinto beans, rice, white corn Tostitos chips for crunch and you can season to your liking. Mine is Mexican flavored with a side of sour cream and jalapeno green salsa.
What's for lunch? White corn tortilla, turkey pastrami, horseradish cheese, lite avocado mayo, Sriracha, sauerkraut, cilantro, garlic powder, cumin, Mrs. Renfros jalapeno green salsa!!!! Don't think you can't eat healthy when you're on a timeframe for lunch. Wrap in foil, eat cold or warm up 15 seconds. Yumtasticness.... Enjoy
