Comment CARROTS for the recipe 🥕🥕 A few years ago, Southern Living interviewed me for one of their Cooks of the Year profiles and asked me to submit a recipe to go along with it. I submitted this cake, which was inspired by a carrot cake at @trulucksrestaurant (which someone had asked me to re-create and I did my best based on their menu description without having ever tried it!). Mix everything except the egg whites into a smooth batter. In a separate bowl whisk egg whites until stiff peaks form. Fold into the batter.
