Ingredients — 3 15oz cans butter beans, drained and rinsed 1 tbsp olive oil 2/3 cup diced red onion (about 1 small red onion) 1/4 cup minced fresh parsley 2 hardboiled eggs, diced For the dressing — 3 tbsp olive oil 3 garlic cloves, pressed juice from 1 lemon 1 tsp dijon mustard 1/4 tsp chili flakes 1 tbsp liquid honey 1 tsp salt Instructions: 1. In a small bowl whisk together 3 tbsp olive oil, pressed garlic cloves, lemon juice, dijon mustard, chili flakes, honey and salt. Set aside. 2. To a medium frying pan add 1 tbsp olive oil over medium heat. Once warm, turn to medium-low and add the butter beans and a pinch of salt. Cook for 4-5 minutes, stirring occasionally, until warm. 3. INGREDIENTS ▪️300g halloumi, cubed ▪️2 tbsp hot honey ▪️1 tsp chilli flakes ▪️570g chickpeas ▪️1 tsp paprika ▪️1/2 cucumber, finely chopped ▪️3 beef tomatoes, finely chopped ▪️1/2 red onion, finely chopped ▪️1 yellow pepper, finely chopped ▪️Large handful of coriander, finely chopped Dressing ▪️Juice of 1 lemon ▪️1 tbsp honey ▪️2 tbsp extra virgin olive oil ▪️Salt and pepper to taste Method: Sauté halloumi with hot honey & chili flakes until golden. Roast chickpeas with oil, salt & paprika at 200°C for 30 min. Whisk dressing ingredients. Chop veggies & coriander. Mix everything in a bowl, add dressing, toss & serve.
