I dusted the white cotton candy with matcha powder to add the color. Make sure to work with a frozen cheesecake and that when making your cheese holes that you make the divots DEEP. The holes will lose some definition once the cheesecake is dipped in chocolate. I used @stoverandcompany eleven o one deluxe melting wafers because they are a smooth thin consistency that keeps the detail on treats when you dip. Here’s a much better option! 3-Ingredient Samoa 🍪 Cookies No baking required and they are absolutely delightful! You’ll need: 20 pitted dates soaked in warm water (I used @terradelyssa already pitted from Costco OR 20 medjool dates, pitted and soaked 1 cup toasted coconut flakes 3/4 cup melted dark chocolate mineral salt (optional) 1. Pit your dates and soak them in warm water for a couple minutes to soften. 2. Blend the dates in a food processor. Add a little water if needed and scape down the sides until the mixture is smooth. 3. Stir in the toasted coconut (I toasted mine for five minutes in a pan) 4. Roll the mixture into balls and place them on a lined baking sheet. Flatten with a spoon. 5. Poke holes in the center (I used a metal straw for this). 6. Place the cookies in the freezer while you melt your chocolate. 7. Remove from the freezer and dip the bottom of each cookie into the melted chocolate. Drizzle additional chocolate on top. 8. Place back in the freezer for about 30 minutes and enjoy! Enjoy! xx * 2/3 cup vegetable oil * 3/4 cup granulated sugar * 1/2 teaspoon salt * 2 large eggs * 2 tsp cinnamon * 1/2 teaspoon ginger * 1 tsp baking powder * 1/2 tsp baking soda * 1 cup all purpose flour * 1 1/2 cups carrots, finely grated * 1/2 cup chopped pecans or walnuts, toasted CREAM CHEESE FROSTING * 1 8 oz (250g) package cream cheese, softened * 1/4 cup butter, softened * 1 tsp vanilla * 1 cup icing sugar * 1 tbsp whipping cream Instructions * To make the cake: Preheat the oven to 350°F. Lightly grease a loaf pan and line with parchment paper. * In a large bowl beat together the oil, sugar, salt, eggs, spices, baking powder, and baking soda. * Add the flour, stirring until well combined * Add the carrots and nuts, and mix until just blended.
