Knead dough for 5 mins, adding flour a little at a time until you no longer have sticky dough. Transfer dough into bowl, cover and let rise for 1 hour. Divide dough into 10 pieces. Form dough into balls. Sprinkle 1tbs cornmeal onto pan lined with parchment paper. Place dough balls on top of cornmeal and flatten into discs to 3/4 inch thick. Lightly spray top of discs and sprinkle on cornmeal. Cover and let rise for 20 mins. Heat large frying pan, griddle or cast iron skillet to Medium-Low heat and spray with oil. Transfer muffins to pan. Cook for 9 mins until light golden brown and toasted. Flip to 2nd side, and cook for 5 mins until golden and toasted.
