Andrea Mattasoglio on Instagram: "Green Vegan Kale Crisp Recipe! 🍃 First, clean and blanch the kale in plenty of salted water. After cooling it in cold water to stop its cooking and preserve its bright colour, blend it with a part of its cooling water, a drizzle of oil and a pinch of salt. Filter everything through a strainer to get a “liquid bright green kale”. Then combine 60g of liquid kale, 25g of isomalt sugar, 15g of glucose syrup, 20g of corn starch and 2g of salt. Blend it until smooth. Transfer the mixture into a saucepan and heat it until it thickens. Let it cool down a bit, then spread it on a baking mat and cook at 100C degrees for about 1 hour.
