This pot pie is modified from a recipe by Alton Brown, who I actually got to meet once. Very cool guy! The puff pastry gets a little chewy when you refrigerate the leftovers, but otherwise it’s pretty fool proof.

• 2 cups Chicken, cooked

Produce

• 1 cup Celery

• 1 cup Onion

Refrigerated

• 2/3 cup Coconut milk or plain unsweetened dairy-free milk beverage, lite canned

Canned Goods

• 2 cups Chicken broth

Condiments

• 3 tbsp Buttery spread, dairy-free

Baking & Spices

• 3 tbsp All-purpose flour

• 1 tsp Curry powder

• 1/2 tsp Pepper, fresh ground

• 1 tsp Salt

• 4 cups Vegetable mix, frozen

Oils & Vinegars

• 1 tbsp Oil

Bread & Baked Goods

• 1 package Puff pastry
