Sear on medium high heat in a Dutch oven with EVOO . I like to sear for a couple of minutes on one side. Then flip it. Turn off the heat and cover with just a slit open for steam to release. Let that sit for about 8 minutes. Once done remove the chicken. Add in your onion, celery, and sun-dried tomatoes. There should be enough leftover juice and oil from the sundrieds, but if your pan is dry add a bit more EVOO. Let this cook until onion are translucent. About 5 minutes, stirring as needed. Add in your garlic and cook for 30 seconds. Add in your tomato paste and flour. Mix together. Add in your chicken broth a little at a time. You should have a fond built, so scrap up all the bits. Add in all the broth. Cover and reduce to low. Let cook for 10 minutes. Add in your heavy cream, spinach, gnocchi, and fresh grated Parmesan. Cook about 5 minutes and add back in your diced chicken. Top with fresh basil and more Parmesan. Heat a large skillet with 1 tb reserved sun-dried tomato oil.
