3.1K reactions · 964 shares | Repost from @yourpolynesianbestie • Kid approved Healthier Homemade Granola Bars What you need: 1 C peanut butter of choice 1/2 C Honey of choice 2 1/2 C Old Fashioned Rolled Oats 1/2 Cup Mini Chocolate chips Optional: 1/4 C Shredded sweetened coconut flakes 1/4-1/3 C melted chocolate wafers for drizzling (I totally recommend Ghirardelli milk or Dark chocolate melting wafers) NOTE: If you’re wanting to use a whole sheet pan like I did, you will need to double the recipe! In a large mixing bowl, add in your peanut butter and honey. Place in the microwave for 30 seconds/until peanut butter is melted and smooth. Next, add in your oats and coconut flakes. Mix thoroughly Now add in your chocolate chips and fold them in. In a large regular sized sheet pan with parchment paper, dump your mixture. Spread the mixture out evenly on the sheet pan with your hands and or a small rolling pin. Pro tip: to avoid the mixture sticking to your hands while spreading, grab some butter and rub it on your hands! It makes life so much easier!! In a small mixing bowl or a microwave safe bowl, melt your chocolate wafers in the microwave in 30 second increments or until fully melted. Use a spoon to drizzle chocolate. Once done, place the pan in the fridge for at least an hour. Cut into bite size bars. (I was able to get 33 bars!)
