VEGETABLE FRITTATA - Healthy High Protein Breakfast 🍠 the perfect breakfast/lunch that is high in protein, packed full of vegetables & is great for meal prep! Recipe below 👇🏼 Ingredients 10 eggs, whisked 1 sweet potato, cut into small cubes 1 capsicum, sliced 1 zucchini, sliced 10-12 cherry tomatoes, sliced 2 cups spinach Generous sprinkle of feta Salt & pepper, to taste Method: 1. Roast your sweet potato, capsicum and zucchini for 40 minutes on 180*C or until soft. 2. Pour your roasted vegetables into a medium sized lined baking dish. 3. Pour your whisked eggs over the vegetables, then add in your spinach, tomatoes & salt and pepper and mix well. 4. Top with your feta cheese. 5. Bake in the oven for 30-40 minutes on 180*C or until the egg has cooked through. video credits: thefitfeast
